PanBirretta is a blonde Ale that shines in the glass with a colour golden and a creamy foam. The basis of this craft beer there is malt from the barley crops in our territory and unsold bread.
The Forum Iulii Brewery was born in Cividale del Friuli (UD) from a project that came to fruition during the year 2018 with the completion of the renovation of the premises of a historic carpentry shop whose construction dates back to 1965. The building has been completely renovated, creating a laboratory with a 10-hl cooking plant, fermentation and packaging facilities, and a preservation and storage area. The building also houses a TapRoom where you can taste all our production beers paired with gastronomic offerings. From the beginning, our production philosophy has been inspired by the principles of environmental sustainability. Energy needs are covered entirely by renewable energy sources that guarantee us energy independence.

The raw materials used in the production process are almost exclusively from our local area. The Barley comes from 0 km cultivation, the Water from local springs and the Reclaimed Bread from local Lenders We are energy independent as our energy needs are fully covered by completely renewable energy sources. In fact, we have a 430 kW photovoltaic system and a biomass power plant fueled by wood processing waste. Packaging has also been selected following the philosophy of sustainability. The same is done in aluminum cans as the latter is 100% recyclable. It is called the “permanent green material” because it does not wear out and can be reused indefinitely, safeguarding a many resources and thus reducing CO2 emissions. The use of the can saves 40 percent in volume in transportation compared to glass and 20 percent compared to plastic; its low weight also saves additional resources.

Lecturers are the soul of the project!
We are all aware that food waste is too great a phenomenon that needs to be reduced as much as possible. Sensitivity and willingness to change are the characteristics that distinguish our Lecturers who join the PanBirretta® project on a daily basis.
Donating surplus Bread to give it a new life is a gesture of responsibility, but also an incentive to increase the Circular Economy: the Bread is conferred, beer is brewed and distributed to consumers so as to create new value added to a product that would otherwise have become waste.
The PanBirretta® project not only means beer, but it means optimizing even more the management of brewing byproducts such as spent malt brewing grains and hops from the brewing process.
The spent grains, through a process of drying and processing into flour, are used to create doughs for the production of bakery products such as breadsticks, crackers, sweet and savory buns.
PanBirretta® is sharing, in fact through the distribution and consumption of our beer we generate opportunities for different stakeholders to meet and collaborate in order to promote environmental and social awareness.
